Spicy Crunchy CRISPY BAKED Sweet Potato Fries

Ah... the illusive Sweet Potato Fries.

I have about decided that it is impossible to get the crispy crunch of russet potato fries.  They simply do not have the right consistency.

But, these do come pretty close.  The Panko bread crumb coating does crisp up nicely, adding a crunchy texture to the soft chewy sweet potatoes.  The egg white coating, along with the extra Cajun spices in teh recipe does add an outer more crisp coating of the taters.  Not the firm McDonald's type crispy fry, but a reasonable healthy alternative.

But even better, these have all the taste that you could ask for.  Cajun spices mix and mingle with the natural Earthy sweetness of the potato to create something wonderful.

So... An acceptable alternative to starchy fries but a more than wonderful flavor.  This recipe is a winner!


OK... Here's what I did...


Spicy Crunchy CRISPY BAKED Sweet Potato Fries


Ingredients
  • 4 Medium Sweet Potatoes, Cut into French fry Shape
  • 4 Large Eggs, WHITES ONLY
  • 2 TBS Water
  • 1 Cup Panko Bread Crumbs
  • 1 TBS Cajun Spice Mix
Cooking Directions
  1. Soak cut potatoes in a bowl of cold water for 30 minutes
  2. Preheat oven to 425 degrees
  3. Line two baking sheets with parchment paper
  4. Towel dry the potatoes.
  5. In a bowl, add egg whites and water; mix together until foamy.
  6. In another shallow bowl add bread crumbs and spices; mix well.
  7. Dip the potatoes in egg white, than into bread crumbs and place on to prepared baking sheet. Do the same for remaining potatoes.
  8. Bake in oven for 25 - 30 minutes; flipping potatoes half way through cooking time. Cook the potatoes until crispy.
  9. Serve warm and ENJOY!
